Beltane is May 1st! Also known as May Day, Beltane is the polarity of Samhain (also known as Halloween). While Samhain is the time when we celebrate and contemplate death, Beltane is the time when we celebrate LIFE and being alive. With this in mind, look for joy this Beltane season and constantly be on the lookout for ways you can expand your capacity for joy.

Healthy & Delicious Banana Nut Muffins
This is adapted from a recipe in The Garden of Vegan.
Ingredients:
- 1 1/2 cups white whole wheat flour
- 1/2 cup date sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup oat bran
- 1/2 cup raw walnut pieces or chopped walnuts
- 2 mashed bananas
- 1/4 tsp cinnamon
- 1/3 cup olive oil
- 1 tsp vanilla extract
- 2/3 cup soymilk
Preheat your oven to 375. Combine flour, date sugar, baking powder, baking soda, salt, oat bran, and nuts. Mash the bananas and stir in the cinnamon, olive oil, vanilla, and soymilk (it won’t totally blend). Pour the wet mixture over the dry and stir just until all is combined. (You may want to add an extra splash of water if you’re at a high altitude like I am.) Line a standard muffin tin with 9 muffin liners. Evenly distribute the mixture into the 9 cups. (They will be pretty full – that’s normal.) Bake for about 18 minutes or until a toothpick comes out clean.
